No bake muesli bar cravings

I remember loving going to the gym with my mum when I was a kid, she was a regular who loved group cardio classes, there was a play area where I’d sit and watch ladies in scrunchy socks, tights and leotards (worn over tights…cringe) keep in unison.  Come to think of it thats probably where I first enjoyed doing exercise too, we were allowed to join class if there weren’t too many ladies in that day.  What I really loved about mums gym was the cafe down stairs, it use to sell seed&nut bars (made in store) and we were obsessed with them!  I’d get one every time I went with her.  Fast forward 20+ years later while pregnant with Ryder I don’t know why but I wanted those bars from my childhood.  From memory I made something similar and made a few substitutions to make it a little healthier, I’m most definitely known in my family as always being the one who eats healthy or ‘boring’ as they’d actually say, but this no bake muesli bar is yum quick and super easy.  They will last a long time when stored and hidden from other members of your household properly (good luck) 😉

If you’ve read my last post finding balance you’ll know we’re expecting baby number 2 and now out of nausea and having an appetite back this is the type of thing I grab in the afternoon for a snack with a cup of tea.

P.s yes its healthy but it has to taste good otherwise why share?! and since sharing is caring happy muesli making.

You will need

  • 330 grams of seeds and nuts of your choice
  • 1 cup of oats
  • 1/3 cup coconut sugar
  • 3 Tbsp honey 🍯
  • 3 Tbsp coconut oil
  • Dark chocolate (80%)
  • Cranberries for decorating



  1. using a non stick pan (no need for extra oils) toast all your seeds, nuts and oats in batches
  2. set aside and allow to cool in a mixing bowl
  3. combine coconut sugar, coconut oil, and honey in a pan and melt
  4. bring the mixture to a bubble be careful not to over caramelise the mixture as after caramelising comes burning! it can happen in a split second
  5. stir and combine the caramel mix into the seed nut and oat mixture
  6. divide the mixture into non stick cup cake trays
  7. with your hand use a piece of baking paper to compress the mixture in each mould of the tray
  8. set aside and cool for at least 30minutes
  9. melt dark chocolate and drizzle over
  10. sprinkle chopped cranberries
  11. then if your like me put the babe down for a nap 😴 turn the kettle on, make a cuppa and enjoy
