Salmon feta mango salad

We’ve been home in France for just over a week thrown a birthday party for a 1 year old for over 30 people, done loads of laundry and I’m slowly finding the motivation to get back in the kitchen.  Now back in warmer weather, well except the last few days I always associate summer with salads but that doesn’t mean they have to be boring.  One of my favorite go to salads thats loved in our household is a mix of fruit, fish, and most definitely fresh produce and tastes so good!

You will need


  • 300 gm salmon
  • 1 mango
  • 1 pomegranate
  • half a red onion
  • 100 gm feta
  • 1 bag of Rocket

Instructions


  • Wash rocket and set aside
  • Slice mango
  • Crumb feta
  • Finely slice red onion
  • Beat pomegranate out from its casing…ok not a chef or foodie way to say it! Usually the back of a wooden spoon does the trick be careful of red splatter, it goes everywhere!
  • Pan fry salmon, skin side first
  • Set salmon aside to cool
  • Assemble salad in layers, layers allow everyone to have a bit of everything! It’s a pet peeve of mine when you go to get salad and end up with mainly the leaves as the other more interesting things tend to find there way to the bottom of the bowl at least thats my experience plus there is no need to toss dressing as there is no salad dressing the fruit does a great job as acting like dressing
